Would You Like to Have a Gluten Free Peanut Butter Cookie? – Honey Sweetened
I told my grandma a few weeks ago that we needed to try and make some cookies that are sweetened with honey. She has made Peanut Butter cookies many times, so we decided to add some honey to it instead of sugar. She also wanted to try some gluten-free recipes, so I got her some of this gluten-free flour. Enjoy!
First, take all the dry ingredients and mix them together in a bowl. Make sure to mix the baking soda in well, otherwise, you will get a nice chunk of it in a cookie and it will NOT taste good.
- 2 Cups Gluten Free Four (I used Gluten Free Red Mill Flour)
- 1/2 tsp baking soda
- 1/3 tsp salt
Peanut Butter Ingredients
In a different bowl mix in the next few ingredients and blend them together.
- 1/4 cup peanut butter
- 3/4 cup honey
- 1 large egg
- 2 tsp vanilla
Once you are done, take the flour ingredients and slowly mix it in with peanut butter ingredients.
After both bowls are mixed together, place 1 tsp sized dough pieces on a baking sheet. Flatten the dough by pressing down the top with a fork.
If you want the cookie to be softer, bake at 350 degrees for about 10-12 minutes, depending on the size of the cookie. You know it is done when it is slightly brown.
For a crisper cookie, bake a little longer. My grandparents prefer a crisper cookie.
