Who Else Wants to Make Banana Bread with Whole Wheat Einkorn Flour? – Sweetened with Honey!

Finding a healthy banana bread recipe has been a long journey for me, but this the first one I have found that will taste good! And even better, I found some 85% dark chocolate chips! I decided to add these to the banana bread because banana bread isn’t the same without some chocolate chips!
How to Make the Bread
Start by preheating the oven to 350 degrees. I like to do this first so I don’t have to wait to cook the bread once it is all mixed up! Then grab your loaf pan and grease it down and set to the side.
Take all the dry ingredients and put them in a mixing bowl, the flour, salt, baking soda, and cinnamon. After mixing those together melt the coconut oil and honey on the stovetop on low heat. While those are melting I like to put my bananas in my Kitchen Aid mixer and mix them until they are well mashed. Then add the eggs, vanilla, sour cream. After mixing those together add the melted honey and coconut oil. Mix those together well before adding the dry mixture. Add the dry mixture a little bit at a time. Mix in the dry ingredients until it is still lumpy, then add to the pan and bake for 45-60 minutes. I usually put mine on convection bake and it doesn’t take as long. But when I add all those many chocolate chips, the baking does take longer. So start checking it at 45 minutes. If your fork can poke through and come out clean it is done!
Then let it cool before taking it out of the pan, this is the hard part of baking the bread. It smells so good but you can’t touch it! It is good to let it cool for at least 10 minutes before trying to get it out of the pan. If you take it out too early the bread will not hold together well. When you have waited for your 10 minutes to pass, then take the bread out and put it on a cutting board and try some bread! It is best fresh out of the oven.
- 2 cups whole grain einkorn four
- 1 tsp salt
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- 2 large eggs
- 3/4 cups raw honey
- 1/2 cup coconut oil
- 3-4 very ripe bananas
- 1/3 sour cream
- 3 tsp vanilla extract
- 1 cup chocolate chips (more if you love chocolate! I add more usually.)
